After all of that, the winemaking was straightforward. Lots were destemmed
and crushed, with native yeast fermentations. After pressing at dryness, the
wine was aged for 20 months in French oak, 10% new, before being given
a light filtration at bottling. The wine is medium bodied and moderate in
tannin, with some beautiful suppleness to the mid-palate that reflects the
moderate summer, accompanied by a touch of extra richness from the hot
autumn weather.

Blended with 10% Cabernet Franc, the 2020 Estate Grown Cabernet Sauvignon delivers gentle herbal aromas accenting black cherries, cassis and dusty earth. Aged in French oak but with just 10% being new, I thought I detected a hint of cold campfire as well. It's medium-bodied and streamlined yet wooly in feel, with a dry, somewhat astringent finish. The tannins need time, but I wonder how the wine will evolve in the long run, hence the ? in my rating. It may be better to drink the wine young, maybe with some rare beef or lamb to help tame the tannins.
